Undhiyo !!!! It is a Gujrati dish of mixed veggies which we get during winters. It is traditionally cooked in earthen pots but I made it in cooker.
Undhiyo is just like me
Sweet, Spicy umm, tangy, and thodu sa bitter (coz of Fenugreek). It is not only tasty but healthy too !

Haha made it the day before Makar Sankranti and was a bit tensed while making coz it was my first time making this, taste kaise hogi ? Will it taste good ? But yayyyyyyy it was so so so tasty ! I ate a lot and yeah people loved it too.

For making this I used 15+ veggies (Idk Hindi/English names for all of them). Then made a Masala stuffing. Veggies used by me -
Different types of beans, peas, raw bananas, brinjals, onions, potatoes, sweet potatoes, yam, purple yam, fenugreek. (I didn't get few veggies, they were not available in the market.)
For Masala stuffing - grated dry coconut then roasted it, added ginger garlic green chilli paste, some spices.
Stuffed this Masala in veggies -
My most favourite part in Undhiyo is Muthiya - Used Besan, Wheat flour, Fenugreek, Ginger Garlic Chilli paste, Curd and some spices. They were so yummmm.
Cooked all veggies in cooker (only one whistle was enough) then added Muthiyas, cooked for another 5 mins, Undhiyo was ready !
When I posted my Chicken thread, some people were like they don't eat non veg so this veggie post is for them too @URum @Kamini @Peace .
I wanted to make Puris and Boondi Raita too but I was tired (started the preparation noon se, cleaning veggies, cutting them) as I made it in more quantity (had to share with neighbours and relative too) , so asked mumma to make dal rice -_-
