Such a nice thread! So here's my recipe with brown rice ( here btw u can read avdantages and disadvantages of brown rice) because I am such a lover of rice:
Ingredients:
  • 1 cup brown rice
  • 2 cups water or vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
Instructions:
  1. In a saucepan, heat olive oil over medium heat. Add diced onion and garlic, and sauté until translucent.
  2. Add diced bell pepper and zucchini to the saucepan, and cook until slightly softened.
  3. Stir in brown rice, paprika, cumin, salt, and pepper, and cook for 1-2 minutes until fragrant.
  4. Pour in water or vegetable broth, and bring to a boil. Reduce heat to low, cover, and simmer for 45-50 minutes, or until rice is tender and liquid is absorbed.
  5. Once cooked, fluff the rice with a fork and stir in cherry tomatoes.
  6. Garnish with fresh cilantro before serving.
